White poppy seed, milk pudding: Haalubayi or manni #GF #sugarfree

This is one of the popular south Indian traditional dessert items. Haalubayi or manni is one of those divine recipes which could only be prepared with the patience love and at most care. Till today, this is strictly home mode recipe and commercially not available, which brings unique touch to every occasion.

Poppy seeds contain many plant derived natural chemicals that contains anti oxidants and many health promoting properties.

They need to be cooked with the healthy ingredients to reap most of its nutritional value. In this recipe they give the variation to the texture making it decadent with two varied textures and flavours.

I remember the halbayi/manni prepared from the whole grains and milk, in my mother’s kitchen and served with dollop of ghee, one of the soothing and comforting dessert, which we always relished.

With panna kotta like texture, goodness of wholesome ingredients, cooked at right heat, this recipe definitely tops in my desert selection.

Recipe

  • 3/4 cup rice
  • 1 liter whole milk
  • 50 gms white poppy seeds
  • 1/2 tsp ground cardamom seeds
  • 1 cup jaggery (more if you require)
  • Ghee/clarified butter for greasing
  • water for grinding

Method  – Rinse and wash rice and soak  overnight (or 4-6 hours). Grind rice and poppy seeds to smooth paste with water as required. Add jaggery cardamom powder and milk and stir until mixed. (Over mixing doesn’t harm the end product, so mix really well)

Now in a thick bottomed vessel heat the mixture on a low flame, constantly stirring. Slowly the batter starts thickening. Increase the stirring speed and keep stirring to avoid any lumps. This is the important and critical step. Any lump formation may not taste nice in the end product. This would take about 30-35 minutes. The batter would be thicker and gets a shine.

Grease an 8 inch cake tin with ghee.

Pour the cooked batter in the greased pan and allow it to cool at room temperature for at least 1 hour. You may choose to refrigerate and serve it chilled, it would taste great.

This can be prepared couple of days in advance and serve refrigerated.
