Whole-wheat penne with stir fried vegetables


Quick cooking and tasty food is always the dream of me in every morning, especially when it comes to breakfast. Getting up early in the morning, doesn’t seem to be becoming a reality..sigh…..but serving the right food should be…Whole-wheat pasta or sevai/semolina mostly comes to rescue. This penne is one of the most frequent items to appear on our table, and one in the blog wish list for a long as well.


I constantly change the flavours and associated ingredients to cook with pasta. This time, it was the stir fried vegetables with tomato sauce. I had some tomato sauce in the fridge, that means it’s a breeze top put up the pasta, loaded with vegetables.



  • 300 gms  whole-wheat penne
  • 2 cups chopped mixed vegetables – I used cabbage, cauliflower, onion and carrot
  • 1/2 cup tomato sauce
  • 1/2 tbsp oregano powder – if using fresh herbs double the quantity
  • 4 tbsp  – vegetable oil
  • Salt to taste

Method –  Cook/boil the penne as per the manufacture’s instructions on the packet.

In a heavy bottomed wok, put 2 tbsp oil and chopped vegetables. At high flame for about 4-5 minutes, fry the vegetables, keep stirring in between.

Add cooked pasta, tomato sauce, stir fried vegetables and the oil, salt and stir it well

Serves 3-4 persons, best served fresh.
